To those in the koi world, Herb Fritch is all about koi. The reality is that, for Herb Fritch, conservation ranching and aviculture are a serious passion and one in which he invests his personal time and money.
Behind the Aviary Wire: The Quiet Work of Aviculture
From a private collection in Middle Tennessee to a conservation-breeding center in Florida, Herb Fritch’s interest in birds reaches beyond display to the patient work of incubation, husbandry, record-keeping, and long-term care. For Herb, “Keeping any of these species can be challenging but also very interesting and rewarding to see the genetic gains from selective breeding, artificial insemination, and embryo transplantation.”
Where Beauty Becomes Responsibility
Inside Herb Fritch’s private aviary in Middle Tennessee, the brilliant plumage of a Himalayan monal can hold the eye. Yet the room that may best explain the collection is quieter: the incubation room.

It is where aviculture becomes less about rarity and more about responsibility. Eggs must be monitored. Brooders must be prepared. Young birds must be watched closely through their most fragile days.
The beauty of an aviary is found in color, movement, and song. Its success, however, depends on less visible routines: feeding, cleaning, water management, enclosure maintenance, veterinary attention, and dependable records. The American Federation of Aviculture places these same responsibilities at the center of modern aviculture, emphasizing improved breeding practices, husbandry, living conditions, education, research, and the maintenance of sustainable bird populations.
A Private Aviary, Not Merely a Display
An incubation room signals intention. Eggs are inspected and monitored. Chicks may need to be transferred to brooders, where temperature, bedding, feed, and water are controlled. Illness and injury must be recognized quickly, and the parentage and hatch date of each bird should be recorded.
These practices separate serious aviculture from the passive display of exotic birds. The individual bird must be kept in good condition, but a breeder must also understand what is being maintained from one generation to the next.
Correct identification is especially important when working with closely related species and subspecies. An undocumented hybrid may be visually attractive, but it can have limited value in a conservation program intended to preserve a recognizable taxonomic line. Accurate records, known parentage, and carefully selected pairings allow future breeders to make informed decisions.
This is one of the principles that links Fritch’s private interest in birds to his involvement with a much larger avicultural operation in Florida.

From Tennessee to a Florida Conservation Center
Fritch’s most clearly documented institutional role in aviculture is with the Avian Research Institute and Conservation Center, commonly known as ARICC, in Duette, Florida.
The center’s mission is conservation breeding and avicultural education, with particular attention to correctly identified taxonomic lines and genomic quality. Its stated purpose includes providing responsibly raised birds to private collections, public institutions, and zoological facilities.
Aviaries and Sanctuaries: Different Forms of Care
A private aviary, a conservation-breeding center, and a bird sanctuary are not interchangeable.
Fritch’s Tennessee collection represents private aviculture. ARICC is organized around propagation, research, and education. A sanctuary or rehabilitation-oriented aviary may instead provide permanent care for birds that have been injured, imprinted on people, or otherwise cannot survive independently in the wild.
Fritch’s public support has also extended to this side of avian care. The Barbara J. Mapp Aviary Education Center at Radnor Lake State Natural Area in Nashville reflects the Fritches’ support for public institutions. Their gifts were not restricted specifically to the aviary; their verified connection is to broader support for Friends of Radnor Lake during an important aviary initiative.
Opened in 2015, the Mapp Center provides permanent housing for non-releasable birds of prey. Its resident birds have permanent injuries that prevent their return to the wild. The facility combines lifelong care with public education, allowing park visitors to learn about raptors while providing the birds with food, veterinary treatment, enrichment, and specialized habitats.
This represents a different but equally important responsibility. Conservation breeding considers how a species or breeding line can continue into future generations. A sanctuary considers how an individual bird that cannot be released can receive proper care and still help people understand the natural world.
The Long View of Aviculture
Herb Fritch’s story in aviculture is not defined by one bird or one enclosure. The arc visible today extends from a private aviary in Middle Tennessee to a leadership position at a Florida conservation-breeding center, along with support for conservation organizations closer to home.
In that quiet work, Fritch’s interest in birds has become part of a larger avicultural effort—one built not only around possession, but around continuity.
The Great White Buffalo of Middle Tennessee

White by Breeding, Sacred by Tradition
Many white buffalo in private herds are not albinos or naturally occurring white bison. They are the result of crossing American bison with Charolais cattle, then selectively breeding the descendants back to bison over several generations.
Charolais cattle carry a pigment-dilution variant in the PMEL17 gene that produces their familiar cream-white coat. One inherited copy can lighten an animal’s natural color; two copies create a much stronger dilution. Breeders retain offspring carrying the trait and repeatedly cross them with bison, selecting for both the pale coat and the heavy head, hump, and body of the American bison. When two one-copy carriers are bred, each calf has a 25 percent chance of inheriting two copies and developing the strongest cream-white coloring.

The process takes time. In 1994, Kansas breeder Tony Leis told The Western Producer that his family had spent more than 20 years developing its Charolais-bison line. The animals were bred back to full-blooded bison until, apart from their color, they closely resembled the dark animals around them. That account places documented white-buffalo breeding programs in the early 1970s or before, although experiments in crossing cattle and bison for hardiness and beef production reach back into the nineteenth century.
The result may look almost entirely like a bison, but the pale coat remains evidence of its cattle ancestry.
That distinction carries special importance because the white buffalo has a meaning far older than modern breeding programs. Beliefs vary among American Indian nations, but the white buffalo calf is especially sacred to the Oceti Sakowin—the Lakota, Dakota, and Nakota peoples.

According to their oral tradition, White Buffalo Calf Woman came to the people during a time of hardship. She brought the sacred pipe and teachings about prayer, respect, responsibility, and the relationship between human beings, the buffalo, and the Earth. Before leaving, she became a white female buffalo calf and promised to return.
The birth of a white calf may therefore be understood as a sign of hope, renewal, and answered prayer. It is also a call to responsibility. After a naturally white calf was reported in Yellowstone in 2024, Lakota spiritual leader Chief Arvol Looking Horse described the birth as both a blessing and a warning—a reminder that people must do more to care for the Earth and its animals.
A Charolais-bison hybrid and a naturally occurring white bison are not the same biological event. One may be produced through deliberate selection; the other appears without introduced cattle genetics. Both may command attention, but the spiritual meaning of a white buffalo belongs to the Native nations and ceremonial leaders whose traditions have preserved its story across generations.
American Elk and Red Deer: Close Relatives on Private Land

Across an open pasture, American elk and red deer can appear remarkably similar. Both are large members of the deer family. Mature males grow and shed antlers each year, gather females during the autumn breeding season, and challenge rivals with calls that carry across the land.
Yet they are distinct species, shaped by different landscapes and histories.
American elk, also known as wapiti, are classified as Cervus canadensis. Red deer are Cervus elaphus. They belong to the same genus and were once classified as members of the same species, but genetic research now supports treating them separately. They remain closely related and can produce fertile hybrids in captivity.
Recognizing the Differences
American elk are generally larger and heavier than red deer. Their coloring often shows a clear contrast between a tan body and a darker head, neck, and legs. Elk also have a broad, pale rump patch, a short tail, and, particularly among mature bulls, a pronounced neck mane.

Red deer are usually smaller and more evenly colored. Their reddish-brown summer coat gives the species its name, while the winter coat becomes darker or grayer. Their rump patch is generally smaller and less sharply defined than that of an elk.
The antlers also differ. Elk commonly grow long, sweeping main beams with individual tines extending upward. Mature red deer may develop a cluster of tines near the top, creating the crown-like form traditionally associated with an older stag.
Their voices provide the clearest distinction. During the rut, a bull elk produces a high, rising bugle. A red deer stag gives a deeper, heavier roar. Both calls serve to attract females and warn competing males.
Why Elk and Red Deer Are Raised
Private landowners maintain elk and red deer for several reasons. Some properties operate as agricultural enterprises, producing venison, breeding stock, or antlers. Others keep the animals for wildlife viewing, education, agritourism, or carefully regulated hunting. In private sanctuaries, they may be maintained simply for the opportunity to observe a herd moving through pasture and woodland.
For farmers, deer can offer an alternative to conventional livestock. They can make productive use of suitable grazing land, but they require specialized fencing, handling facilities, and veterinary care. Their ability to jump, sensitivity to stress, and seasonal breeding behavior make experienced management essential.
Because elk and red deer can interbreed, owners must also decide whether to maintain genetically separate herds or produce intentional crosses. Hybridization has a place in some commercial breeding programs, but it can obscure the identity of the original species if records are not carefully maintained.
Stewardship Behind the Fence
The value of a private herd depends on responsible care. Elk and red deer are susceptible to chronic wasting disease, an always-fatal neurological illness affecting deer, elk, and related species. Secure fencing, animal identification, health testing, and detailed movement records are therefore important parts of herd management.
Escaped animals may damage crops, spread disease, or interbreed with related wild populations. For that reason, private ownership should not automatically be considered conservation. Its importance rests in careful breeding, sound animal welfare, secure facilities, and cooperation with state and federal wildlife authorities.
American elk and red deer remain close relatives, sharing the same yearly rhythm of growing antlers, gathering herds, and autumn courtship. Their differences are found in size, coloring, antler form, and voice—the high bugle of the American elk and the deep roar of the red deer stag.
On well-managed private land, both can contribute to agriculture, rural income, education, and a greater appreciation of large hoofed animals. Their presence also brings responsibility: to protect their health, respect their natural behavior, and care for the land that supports them.
African Heritage on Private Land
Behind their great sweeping horns, Watusi cattle are a breed shaped by East African pastoral tradition, environmental adaptation, and generations of careful stewardship.

Few cattle change the appearance of a pasture as completely as Watusi. Known formally in North America as Ankole-Watusi, they descend from the Ankole group of Sanga cattle found across East and Central Africa, particularly in Uganda, Rwanda, and Burundi. Among the Ankole cattle, the size and form of the horns became especially important, producing the broad, rising silhouettes for which the breed is known.
In their African homeland, these cattle were never valued only for appearance. They supplied milk while also representing living wealth, social standing, ceremony, and continuity between generations. Under traditional systems, animals were rarely slaughtered because the value of a living herd extended far beyond meat production. Regional names reflected the people and places that maintained them: Ankole in Uganda and Watusi in Rwanda and Burundi, with exceptionally long-horned animals historically associated with royal herds.
The Ankole Watusi International Registry was established in 1983, and the Livestock Conservancy currently classifies the breed as “Recovering.” Private herds therefore represent more than personal collections; when breeding is planned and records are carefully kept, they become part of the continuing conservation of the breed.
On private acreage, Watusi cattle are generally described as docile, hardy, and capable of making efficient use of rough forage. Yet their extraordinary horns require more consideration than ordinary cattle facilities may provide. Gates, lanes, shelters, trailers, and restraint equipment must offer sufficient width and safe clearance, while handlers need experience working around horned livestock. Secure fencing, dependable water, suitable forage, veterinary care, and properly designed handling facilities remain essential.
Their beauty may be the first reason someone stops to look, but raising Watusi responsibly is an act of livestock stewardship rather than simple display.
Ichthyology, Curiosity, and a Fishing Pole
Herb Fritch’s path from regular guest and traveling angler to ownership in Plummer’s Arctic Lodges and Jurassic Living Jewels
There are businesses first understood through financial statements, and there are businesses first understood from a boat. Herb Fritch’s path into Plummer’s Arctic Lodges and Jurassic Living Jewels began on the water. He was a longtime regular guest at Plummer’s, while his interest in arapaima grew through years spent traveling to pursue the great fish of the Amazon. In both ventures, the fisherman came before the owner.
When Chummy Plummer stepped back and sold Plummer’s Arctic Lodges in April 2024, Fritch joined Chuk Coulter, Shane Jonker, and Bobby Richardson as the operation’s four new owners. Fritch’s documented position is that of an ownership partner. At the time of the sale, Coulter was identified as the overall general manager, while Jonker and Richardson brought experience as a former general manager and veteran guide. Plummer’s continues to operate remote lodges and outposts across Canada’s North, offering guided fishing and hunting centered on lake trout, Arctic char, and Arctic grayling. Fritch had first known the business as a customer and fisherman before accepting a place among those responsible for its future.
Jurassic Living Jewels follows a similar path, but with Herb more directly connected to the creation of the concept. The project is transforming a 160-acre fish farm in Arcadia, Florida, into a private, high-end fishing destination built around guided trophy arapaima fishing. The resort development was his vision, born from the experience of pursuing arapaima abroad and wanting to make that experience more accessible to anglers in the United States.
Together, the two businesses show the same progression in different forms. At Plummer’s, Fritch moved from returning guest to one of four partners carrying forward an established northern lodge tradition. At Jurassic Living Jewels, the pursuit of an extraordinary fish became the foundation for developing a new fishing destination. The ownership came later. The fishing came first.
